Feta and peach salad

Ingredients
1 tsp Dijon mustard
1x200g tinned peaches in natural juices
0.5 red pepper, diced
6 cherry tomatoes
large handfuls of mixed salad leaves
3 chopped spring onions
100g reduced fat feta cheese or vegetarian style reduced fat feta cheese
1 garlic clove, chopped
1 tbsp raspberry vinegar
Method
Rinse the reduced fat Feta with cold water then dice and place in bowl.
Add the chopped spring onions and two large handfuls of mixed salad leaves, cherry tomatoes and diced red pepper, mixing well.
Drain the tinned peaches in natural juice, reserving the juice into a bowl.
Add the chopped garlic clove and raspberry vinegar to the juice and whisk in the Dijon mustard.
Chop the peaches into chunks and mix into the salad turning onto a serving plate. Drizzle with the dressing, season with black pepper and serve.
