Ginger, sesame and soy king prawn noodles

Ingredients
165g raw king prawns, deveined
100g fresh egg noodles
1 medium red pepper, de-seeded and sliced
50g frozen peas
30g mangetout
1 spring onion, cleaned, root removed and sliced
2cm piece of ginger (skin on)
2 tsps sesame oil
1 clove of garlic, peeled and diced
3 tsps dark soy sauce
0.25 tsps dried chilli flakes
1 pinch sesame seeds, for garnish (optional)
Method
Heat a large frying pan or wok and add the sesame oil. Add the garlic, ginger, red pepper, half the sliced spring onion and chilli flakes and cook for 1 minute.
Add the prawns to the frying pan and cook for 2-3 minutes (stirring occasionally) until they start to turn pink.
Add in the mange tout, peas and noodles and cook for a further 2- minutes until the noodles are hot.
Stir in the soy sauce and transfer to a warmed bowl, sprinkle over the remaining sliced spring onion and sesame seeds. Serve straight away.
