Simple cottage pie for two
This classic meal is made using frozen veg to save time and money!

Ingredients
200g lean beef mince
260g frozen mixed vegetables
400g old potatoes
150ml beef or vegetable stock
1 medium onion, peeled and finely diced
1 tsp Worcestershire sauce
2 tsp gravy granules
Salt and black pepper to season
Method
Peel the potatoes, cut into small chunks and boil in water, until soft but not mushy. Drain the potatoes and turn back into the saucepan and mash until smooth. Seasoning with a little salt and black pepper. Tip: if the mash potato is a little too heavy for your liking beat in 1 tablespoon of milk.
Heat a non-stick frying pan until quite hot and add the mince a tablespoon at a time leaving 20 seconds between each addition (this allows the frying pan to stay hot, ensuring the meat gains colour and flavour rather than boiling) and dry-fry until it changes colour and caramelises.
Add the onion to the mince and continue to cook for a further 3-4 minutes until the onions have started to soften.
Add the frozen mixed vegetables, stock and Worcestershire sauce to the mince, reduce the heat slightly and gently cook for 3-4 minutes before stirring in the gravy granules, cook for a further minute then remove from the heat
Preheat the oven to 200C, 400F, GasMark 6.
Transfer the mince mixture to an ovenproof dish and top with the mashed potato. Bake in the oven for 20 minutes until golden brown.
