Chimichurri Paneer Kebabs
Try these lovely vegetarian Paneer kebabs

Ingredients
300g Low fat Paneer
2 tbsps low-fat plain yoghurt
1 small green pepper
1 small red pepper
1 medium onion, peeled
2 tbsps Spicentice Chimichurri Rub
Method
1. Cut the Paneer into 2cm cubes. In a bowl mix together the yogurt and the Chimichurri rub spices. Add the Paneer cubes and gently stir to ensure they are evenly covered in the mixture. Cover and leave to marinate for a minimum of 90 minutes in the fridge.
2. Pre-heat the oven to 180C. Cut the onion into quarters and core and cut the peppers into large chunks
3. Take 2(or 4 small) kebab skewers and alternate the Paneer with the onion and pepper chunks
4. Place on a non-stick baking tray and cook for 20 minutes, turning after 12 minutes to ensure they are evenly cooked. Remove from the oven and serve straight away
Tip
You can also cook these on a BBQ or under a grill
